History:
Founded In 1896, Wakabayashi Jozo (Brewery) Has Been Family Run For Over 120 Years. 5Th Generation Master Brewer, Mami Wakabayashi Is The First Female To Run Their Brewery, And One Of The Very Few Female Master Brewers (Toji) In Japan. (Less Than 3% Of All Breweries In Japan Are Run By A Female Toji.)
Her New “Moon Bloom” Line Was Inspired By Wakabayashi Brewery’S Namesake, “Tsukiyoshino” (Moon Cherry Blossoms). It Was Also Inspired By The Tale Of The Princess Kaguya, One Of Japan’S Oldest Legends, A Story Of A Beautiful Woman From The Moon Who One Day Visits The Earth.
Her Sakes Are Made In Small Batches With Low-Temperature Fermentation, Permitting The Yeast Time To Develop Complex Aromas Ideal For The Subtlety Required In Sake Making. Not Only Does Nagano Provide Clean Water For Brewing, It Also Creates Ideal Climatic Conditions For Rice Cultivation, Which Wakabayashi Uses To Her Advantage. Moon Bloom Uses Delicate-Tasting Miyamanishiki And Hitogokochi Rice Locally Sourced From Nagano Prefecture.
